New Year! New frame of mind! After a couple of months of eating everything thanks to the holiday season, it’s nice to start easing into a lighter January filled with everything I usually love but done in a much different way.
If there is one dessert I absolutely can’t do without, it is mousse. The texture, the richness and the taste are unforgettable. However, I’m not quite a fan of the effort involved and super indulgent ingredients that usually go into one. That’s why I absolutely love this super quick and Easy Lemon Mousse Recipe I created using new Yoplait Greek 100 Protein Vanilla.
The texture of this new Greek 100 Protein Vanilla is already so fluffy and thick that it lends itself so perfectly to this easy lemon mousse recipe. Why did I use vanilla you ask? I wanted the flavors of both vanilla and lemon in the mousse, and vanilla is a great flavor to build on. I added bursts of citrus flavor with lemon extract and lemon zest but I didn’t hide the gorgeous essence of the vanilla. To lighten the yogurt, I folded in a coconut milk-based whipped topping (you can also use regular refrigerated whipped topping as well) and added a touch of sweetness from honey.
I also loved that this little dessert also had a great boost of protein. The Greek 100 Protein Vanilla has 15 grams of protein. It also has live and active cultures, is made with flavors from natural sources and is free of growth hormones and high fructose syrup. Now I can feel great about my dessert (or mid-day snack if I’m feeling lucky).
This recipe is definitely a keeper. The result was super light in texture and absolutely irresistible. I truly felt like I was indulging in the real thing.
- 2 individual containers Greek 100 Protein Vanilla
- ¾ cup refrigerated whipped topping
- 1 teaspoon honey
- ½ teaspoon pure lemon extract
- Garnish: lemon zest, mint and assorted berries
- In a medium sized bowl, whisk together Greek 100 Protein, whipped topping, honey and lemon extract until smooth.
- Add mousse to individual cups and refrigerate.
- When cool and ready to serve, garnish with lemon zest, mint and assorted berries.
